Atelier Soba is an atypical place in the heart of the 11th district of Paris, exclusively dedicated to buckwheat flour. Discover an urban mill dedicated exclusively to buckwheat flour and a homemade workshop of fres gluten-free Soba pasta and other products made from organic buckwheat.
These pastas, based on buckwheat, are a specialty of Japan.
Olivier, former farmer in Ariège Pyrénées, went to the land of the rising sun to graduate from Master Soba and to immerse himself in Japanese culture. Back in France, he made his own mills inspired by those of Japan, whose the low speed and the high weight of the stone are a guarantee of a high quality flour.
Beyond the making and selling, he passes on his know-how during Soba pasta classes. Meet on Fridays evening at 7pm and Sunday mornings at 11am (dates available by clicking on the button “book”).
To shop or take-out, buckwheat flour and Sobas pasta are fresh, ground and prepared daily on-site to keep the taste and nutrients and other components beneficial to health to its maximum. 100% buckwheat, his pasta does not contain gluten, eggs or dairy products.
You can also buy shelled buckwheat and Sobacha tea. This infusion made from roasted buckwheat seeds is an ancestral drink from Japan and Korea. Rich in antioxidants and vitamins, without caffeine or theine and therefore without gluten, it is the star of health drinks!
