From starters to desserts, you can indulge yourself with gluten-free options, and also egg-free, or dairy-free (milk, lactose) and more. Their trademark is a pizza in shape of a heart!
If the restaurant is not 100% gluten free, everything is done to reduce the risk of cross-contamination: preparing dough pieces in a separate laboratory, with a dedicated mixer. Rolling out the dough and preparing the filling is also performed in this room. To cook the pizza, they used a furnace with two chambers - the top is exclusively reserved for gluten-free pizzas.
As some of his relatives follow a gluten-free diet, Raffaele is convinced of the benefits of gluten-free cooking. It took him several months to find the right recipe for his gluten-free pizza dough (and without milk and egg) - beware of wheat allergies, pizza dough is specially formulated for gluten intolerant (but contains gluten-free wheat starch).
. The whole team (with the Italian accent!) was sensitized to gluten-free cooking.
The products used are gluten-free, fresh and most often organic. Everything is homemade.
Beyond pizzas, pasta, lasagna and gnocchi are also gluten free. These dishes are also egg-free. For milk and lactose, the chef adapts - except for the lasagna (with a bechamel base). Pizzas can be served with buffalo cheese or simply without cheese.
The restaurant also offers more traditional dishes, based on veal, scallops or prawns.
All desserts (except tiramisu speculos) are gluten-free: lemon meringue or tatin tart, panacotta, cheesecake con mascarpone ... But here again beware of wheat starch for allergic. The only dessert without milk / lactose / egg is the fresh fruit salad.
As for drinks, the pizzeria offers a gluten-free Italian beer (deglutenized).
